Toffee Popcorn Cupcakes




For The Cupcakes

4oz butter
6oz self raising flour
4oz caster sugar
2 tsp of milk
2 large eggs
2oz toffee popcorn
4 drops vanilla essence

For The Frosting

5oz icing sugar
3oz butter
2oz toffee popcorn ( mashed in to bits)
2 drops of vanilla essence.

Toffee popcorn for decoration.


Mix sugar and butter, add 2 eggs and sieve flour in bit by bit. Add milk and vanilla essence. And whisk until smooth.

Spoon mixture in to cake cases then add 4/5 bits of popcorn in to the mixture. Cook on gas mark 3 for about 18 minutes.




Once cooled mix the icing sugar and butter together till smooth, add 2 drops of vanilla essence then spoon in the crushed popcorn. Add the icing to the top of the cakes and add 2/3 bits of popcorn for decoration.
